Salsa Senorita Summer Grilling Ideas

Summer cookouts are here and Salsa Senorita has some great ideas to spice things up a notch . Salsa Senorita-spiked baked beans are a quick and easy side dish you can make ahead of time, then just pop in the oven.
Salsa Senorita Spiked Baked Beans
28 oz baked beans
28 ounces canned black beans
1/2 cup Salsa Senorita ( any variety )
1/2 cup spicy brown mustard
3T brown sugar
1/2 cup worcestershire sauce
3 T molasses
4 slices bacon, cooked and crumbled
In a large mixing bowl, combine beans, Salsa Senorita, mustard, brown sugar, Worcestershire sauce and molasses. Mix well and pour into baking casserole dish and sprinkle with cooked bacon. Bake at 350 for 30- 40 min. Variation: Add one pound cooked ground sirloin or ground round.

Spicy Ideas for Spring on Fox 6 TV

Had a wonderful time today at WBRC TV Fox 6 in Birmingham. We cooked up a fresh and spicy spinach pie- a fabulous and healthy brunch or dinner dish. It's low fat and super-low carb too and you'll love how quick and easy it is. Enjoy the recipe and welcome spring!
Salsa Senorita Spinach Pie *
15 oz fat-free ricotta cheese
10 oz chopped frozen spinach, thawed and squeezed dry
3 large egg white(s), lightly beaten
1 Tbsp cornstarch
¾ tsp. sea salt
¼ tsp. black pepper, freshly ground
¾ cup Salsa Senorita (any variety)
1/4/ cup low-fat shredded cheddar cheese, sharp variety
Instructions:
Preheat oven to 375 degrees. Spray a 9-inch pie plate with nonstick spray. Combine the ricotta cheese, spinach, egg whites, cornstarch, salt and pepper in a large bowl. Scrape the filling into the pie plate. Spread the salsa over the top and out to the edges. Bake until the filling is set, and a knife inserted in the center comes out clean, about 30 minutes. Sprinkle the pie evenly with the cheddar cheese. Bake until the cheese is melted, about 5 minutes. Let stand 10 minutes before cutting into 8 slices. Yields 1 slice per serving.
* On the Fox 6 show I added a half a thinly sliced zucchini to the filling- an added dimension of texture and flavor!
Quesadillas Con Carne on Fox 6 TV

We launched Salsa Senorita's regularly scheduled Sunday morning cooking segments on WBRC Fox 6 TV today. Good Day Alabama weekend host Karen Church helped me create Salsa Senorita Quesadillas con Carne. The recipe is a classic "set it and forget it" ..you can start the base early in the morning in your slow cooker or on stove top in a dutch oven, then assemble your quesadillas later, at serving time. Quick and easy! Enjoy!
Salsa Senorita con Carne Quesadillas
2 lbs. chuck roast
1 jar Salsa Senorita (any variety)
¼ cup water 1 medium potato, shredded or ½ bag ready made hash browns
½ bag ready made hash browns
1 onion sliced and sautéed
2 cups shredded Monterrey jack cheese
Flour tortillas
Olive oil
Trim the fat off of the meat dust with flour, salt and pepper. Brown meat in saucepan. Place meat in a slow cooker and add one jar of Salsa Señorita, ¼ cup water and potatoes and cook on low for 5 hours or until meat is tender. Shred meat. Heat 2 Tablespoons of olive oil in a skillet. On one flour tortilla put ¼ cup meat mixture; grilled onions and cheese. Place another tortilla on top (this will resemble a grilled cheese sandwich). Place quesadilla into skillet and brown on both sides. Serve with guacamole, sour cream or salsa.
Salsa Senorita Quick Tip of the day: Use your pizza slicer to slice perfect quesadillas .
Fox 6 TV -White Bean Chicken Chili

Had a wonderful time today on FOX 6 TV, WBRC TV in Birmingham. Host Janice Rogers helped me stir up a pot of one of my favorite healthy recipes- Salsa Senorita's White Bean Chicken Chili. HIgh protein, low fat, yummy !
It was great seeing Janice, Rick Journey, Mickey Ferguson , Sarah Verser and the whole crew...plus, I ran into Birmingham cooking legend George Sarris who was there to make an appearance later in the show. What a morning! Here's the recipe. Enjoy! And, don't forget to visit the new Salsa Senorita page on Facebook. Salsa Senorita White Bean Chicken Chili
4 (15oz ) cans white beans, rinsed and drained
2 lbs. boneless chicken – cooked and shredded
1 Tbsp. olive oil
1 large onion, chopped
4 minced garlic cloves
1 jar Salsa Senorita
2 tsp. ground cumin
1 1/2 tsp. oregano
¼ tsp. cloves
¼ tsp. cayenne
6 cups chicken broth
3 cups Monterrey jack cheese, grated
Sour cream
Cilantro
Heat oil and spices and cook for 2 minutes. Add to beans and stock. Bring to a boil and reduce to simmer for 10 minutes. Add chicken and 1 cup of cheese. Simmer for 30 minutes. Garnish with sour cream, cilantro and leftover cheese.
Salsa Senorita Cornbread
1 package of cornbread mix
6 oz of Salsa Senorita
Follow directions on cornbread mix. Add 6oz of Salsa Senorita and mix well. Bake according to directions on the mix.
